Puttin tomatoes in gumbo is like eating KFC for Christmas...LOL!!! Nah, I was raised in South East Texas a lot of Loozana folks there, I've seen corn and even chicken feet but never tomatoes in homemade gumbo. But that's the great thing about gumbo you can put whatever you want. I take that back, if I find brocolli in my gumbo I'm gone hurt somebody...LOL!

Creole (Seafood) Gumbo has tomatoes in it... Chicken & Sausage (Cajun) Gumbo does not.

The battle between the creoles and the cajuns continue....LOL! If I had a dollar for every time I heard this argument I'd have enough money to pay someone to take all the tomatoes out of all the gumbos in the world. I don't eat no ta-madduz in my gumbo...corn either...or bell peppers.

For the non Louisiana's, Leah Chase (the queen of creole cooking) has an excellent gumbo receipe in her book "Dookey Chase" along with some other great receipes. You can get it at Barnes and Noble I know for sure.

Yeah Leah lost her restaurant in Katrina. She had a cooking show for a minute. I saw her cook gumbo on that show and she put a ton of meat in it. She had chicken, duck, ham, oysters, soft shell crabs, shrimp, sausage, and a bunch of other stuff. She's a great cook.

yeah...the thing with gumbo is that you can put just about anything you want to in it. People not from here(Louisiana) don't get that a lot of times...oh, and thank you for not using Roux in a jar..lol
